4lbs Bone-In, Skin-On Chicken Thighs
3 Tbs Butter
2 Cloves of Garlic
Roasted Garlic Powder
-Generously salt the chicken thighs on both sides and let rest in the fridge for at least a few hours, up to overnight.
-Pre-heat oven to 350 degrees.
-Thoroughly pat chicken dry and season with salt, cayenne pepper and roasted garlic powder on both sides.
-Mince two cloves of garlic and quarter lemon, set aside.
-Bring an ovenproof pan, cast iron preferred, to medium heat on the stove top, melt butter into pan.
-Place chicken thighs skin side down in the pan and let cook for five minutes.
-Flip chicken, cook for another five minutes.
-Turn the stove heat off and remove chicken onto a plate. Add garlic and let brown as the butter comes down in temperature.
-Once garlic is browned add a few dashes of chicken rub and the juice from the lemon, stir to combine.
-Place chicken back in the pan with the skin facing up and place whole pan in the oven to cook for 25 minutes or until internal temp of the chicken is 165 degrees.
-Remove from the oven and let rest for 5 minutes then serve.
