Andrea Nguyen, chef and author of Vietnamese Food Any Day, makes a char siu chicken banh mi in the MUNCHIES Test Kitchen. Andrea marinates and grills chicken thighs to crispy, caramelized perfection, makes quick pickles with daikon radishes and carrots, and slices up jalapeños and herbs to make the ultimate banh mi, all while explaining the origins of this now-classic Vietnamese sandwich.

Cooking Advice For Anyone Who Loves Food
A large number of people consider cooking to be a calming and joyful hobby. A kitchen that smells wonderfully like fresh herbs and spices creates a mood-enhancing atmosphere. Yet, sometimes finding the right advice and recipes can be difficult. Read the insights here to aid in the creation of a fabulous dinner.
A great tip to follow if you use oil to cook is to put it on the sides of the pan while cooking, so it’s already heated by the time it reaches the food. This will give your food the highest level of flavor.
When adding seasoning to meats, try some before cooking the whole thing. Many foods such as hamburgers, meatloaf and meatballs need careful and specific seasoning. After you season the meat, do not cook all of the batch. Section off a small bit and cook it. If you are satisfied with the flavor you can move on to the rest of the batch, or, if the flavor is off, you can add more seasonings to get the flavor right.
For optimal safety, use only sharp knives when preparing food. Dull knives not only make it difficult to cut foods with, but dull knives are considered dangerous to use also. It is more likely that you will cut yourself while trying to get a dull knife to cut something than when you use a well-sharpened knife.
Is fresh basil something you cook with often? Place a fresh bunch of basil in a jar or glass. Submerge the stems in water. Keep it on a kitchen counter so you remember to use it. Switching out the water from time to time will cause the basil to grow, as well. By cutting or trimming the basil on occasion, it will grow even further, so you can have fresh basil for quite a while.
