A fast and easy but yummy dinner that mom has been making for years. She made it quite often for us. She never made the ‘gravy’ to go with it, but I found it was fantastic.
1 can mushroom soup
3/4 c. milk
1 Tbsp. onion, chopped
1 Tbsp. parsley (optional)
1 large chicken roaster, cut up
1 c. seasoned stuffing mix
2 Tbsp. butter, melted
Mix 1/3 cup soup, 1/4 cup milk, onion and parsley. Dip chicken parts in soup mix, then roll chicken in stuffing mix. Place in baking dish. Pour butter over chicken. Bake at 400 degrees for one hour. Combine the rest of the soup and milk and heat thoroughly. Pour over chicken just before serving.
